Technical Information
Remigio Quinayas is one of the few Colombian producers that we consistently see coffee from outside of the Gigante region. The trees of his three-hectare farm, El Silencio, grow on a steep hillside, just off off of the road that leads to the small village of Los Cauchos.
Unfortunately, Remigio has had a few setbacks recently. First, his farm was ravaged by the coffee leaf rust fungus that has decimated much of Colombia's coffee production in recent years. Then an injury to his hand kept him from being able to work on his farm.
But when we met again at the end of the 2011 harvest, he was back at it, having just installed some new equipment in his mill that will make his processing much easier. Though there's still some work to be done to catch up, we're already seeing some spectacular lots from El Silencio and look forward to watching Remigio come back stronger than ever.
